Healthy Tuscan Chicken Soup

Tuscan Chicken Soup

Oven Roasted chicken is one of our favorite fall meals, but because we are only two people, we usually have lots of leftovers. So what to do with all that chicken? You could make our healthy low-fat chile relleno casserole. It makes quite a few servings, and freezes well. Another option is chicken soup, which you can also freeze in individual portions.


We recently made up a batch of this Tuscan Chicken Soup. It was delicious. The lemon flavor of our lemon roasted chicken was a great accent to the other flavors in the soup. We adapted this recipe from Cooking Light.

Tuscan Chicken, Bean and Spinach Soup

1 Tbsp of olive oil
1 Tbsp of butter
2 garlic cloves, minced
1 cup of carrots, chopped
1 medium onion, chopped
1-1/2 cups of sliced mushrooms
2 (15 ounce) cans of cannelini beans, rinsed and drained
2 cups organic vegetable broths
4 cups of fat-free, low sodium chicken broth
1 Tbsp of Italian seasoning
3 cups of shredded, cooked chicken
2 slices Apple-wood smoked bacon, cooked and crumbled (Trader Joe’s carries a delicious apple smoked bacon, that is nitrate-free)
10 ounces of fresh spinach
1/2 teaspoon freshly ground pepper
1/2 cup fresh Parmigiano-Reggiano cheese, grated

Heat the olive oil in a dutch oven over medium-high heat, add the butter, and stir until melted. Add the onion, carrots, mushrooms, and garlic. Cook approximately 4 minutes, stirring frequently. Mash 1/2 cup of the beans with a fork. Add the mashed beans, whole beans, vegetable broth, chicken broth, and Italian seasoning to the pot. Bring to a boil. Reduce the heat, and simmer for approximately 10 minutes, until the vegetables are tender. Add the chicken, and cook 2 minutes. Add the black pepper and spinach, and cook approximately 3 minutes, until the spinach wilts. Ladle about 2 cups of soup into each bowl. Top each bowl with 5 teaspoons of cheese and 1-1/2 teaspoons of bacon. If you are planning on freezing the soup, we recommend that you don’t add the cheese or bacon until you reheat it.
