I don’t know about you, but I have a sweet tooth. Nothing finishes off a meal like a little dessert. Now I am not talking about a slice of cake with ice cream, or pie a la mode. Sometimes it can be as simple as the perfect Lindt dark chocolate. Or an Almond cookie topped with a little Nutella.
While we were on the South Beach diet, we discovered Pistachio Bark. Delicious. We’ve since expanded into other nuts, and found that almonds and chocolate are a match made in heaven. Almonds have a sweetness that is the perfect compliment to dark chocolate. (Of course I am also a fan of Marzipan, and who doesn’t like an Almond croissant?).
Because you are reducing the amount of high calorie chocolate, with fiber-filled, heart-healthy nuts, this is one way to make your sweet and chocolate fix a little healthier.
Almond Bark with Chocolate Recipe
12 squares of semisweet chocolate
1 cup of chopped almonds, shelled and roasted
Put the chocolate in a microwaveable bowl. Put in the microwave for approximately 2 minutes, on high. Stir until melted. Fold in the Almonds.
Spoon the chocolate and almond mixture, on a wax paper lined baking sheet, and spread until very thin. Refrigerate. Break into pieces to serve.
Serves 12.
Almond Bark with White Chocolate Recipe
Unfortunately some poor souls cannot digest dark chocolate well, so here’s an almond bark recipe for them. And while the white chocolate doesn’t have the health benefits that the dark chocolate has, this is still a pretty healthy dessert.
12 squares of white chocolate
1 cup of chopped almonds, shelled and roasted
Melt the white chocolate in a microwave safe bowl for approximately 2 minutes. Stir until melted. Add the almonds.
Line a baking sheet with wax paper, and spread the mixture over it, as thin as you can get it. Refrigerate. Break into pieces and serve.
At Holiday time, add some chopped peppermint sticks. The bright red color makes them as festive as they are delicious.
Serves 12.
